What fun pictures Aunt Peggy! :)
Here is a to die for recipe that we featured on the morning show yesterday! We had the mango salsa and shrimp in martini glasses, it was beautiful and tasty! I am preparing them for girl's night on wednesday!
Caribbean Shrimp "Martini"
Large Peeled Shrimp (tail on or off - optional)
2 Tbsp pineapple or mango rum
1 Tbsp brown sugar
2 Tbsp chopped fresh cilantro
2 Tbsp Caribbean seasoning
Juice of one lime
Mix all ingredients together and marinate for 15-30 minutes. Saute or grill shrimp until pink. Serve with mango, nectarine salsa in a martini glass
Mango Nectarine Salsa
1 mango cubed
1 nectarine cubed
juice of ½ lime
2 Tbsp olive oil
2 tspn minced red onion
¼ cup canned black beans rinsed
pinch of salt
optional: diced jalapeno
Mix all ingredients and refrigerate for 1 hour prior to serving for flavors to blend

The Guggenheim Museum in Bilbao

Having a coffee (Dick) and a tea (Peggy) after the Guggenheim
Sunday promenade along the port in Santander (EVERYONE was there!)
Our favorite bar name so far - maybe we will be able to have a drink there this evening - it was closed yesterday.
